One of my favorites for the holidays. Corn casserole. It's like a thick and creamy cornbread/corn pudding. The kids even like it. Getting really excited about Thanksgiving. You can find this recipe here.

I have seen this recipe on pinterest and via email but have yet to try it. So this morning, I was feeling eggs and I had a bell pepper in the fridge that I needed to use before it went bad. It was really good, and I will definitely be doing it again. Really easy. Literally just throw whatever you want into the Ziploc bag. I would recommend cooking a little longer than it says because mine wasn't quite done in the middle and to be microwaved an extra minute. Ziploc Omelet Ingredients: 2 eggsshredded cheese Salt and pepper And whatever else you want to add, ie onions, cubed ham or crumbled bacon, green peppers, mushrooms, olives etc.) Fill a pan half full of water, (3 quart pan for three omelets). Bring water to a boil. While water is heating, mix omelet together in a quart sized Ziploc bag. Combine eggs, ham or bacon, onion, cheese (or whatever else you want to toss in there) and add a couple of shakes of salt and pepper. Squish all the ingredients together and close the bag completely making sure there is no air in the bag. Boil in water for 13-14 minutes. Pull out of water carefully. Unzip the baggie and slide onto a plate. Suggestion: serve with salsa. You can cook more then one in a pot as long as you have the right size pot of boiling water.) |

AuthorMy name is Kaci. I am a working mom of 3. Wife to Josh. Mom to Jackson, Cameron & Isabella. My life is dinner, homework, baseball, basketball, grocery lists, laundry, middle school, wine, video games, and schedules. I started this blog because I love taking pictures, and I needed a place to document our life. I wanted a place to write it all down, to remember little details so easily forgotten in the mad rush that is the life of a family of 5. Through my photos and words, I endeavor to capture our story.
